Ingredients:
8 Pav (buns)
2 cups cauliflower florets
1 cup capsicum
1 cup green peas
3 tomatoes
1/2 tsp cumin seeds
1/2 tsp amchur powder
1 tsp red chilli powder
2 tsp Everest Pav Bhaji Masala
4-5 cups water
Salt
Unsalted Butter to toast the pav
3 lemon
Directions
1 Wash the vegetables.
2 Pressure cook cauliflower florets,green peas for 1 whistle in 2 1/2 cup water.
3 After it cools down,mash it with the potato masher.
4 In a pan,heat butter and add capsicum and saute till it becomes glossy.keep it separately.
5 Heat butter in a pan and add cumin,after it crackles,add chopped tomatoes and till it shrinks.
6 Add pressure cooked vegetables and add red chilli powder, amchur powder and Pav bhaji masala.
7 Pour 1 cup water, sauted capsicum and salt.cook for another 5 minutes till bhaji thickens.
8 In a pan,add butter and toast the Pav.
9 Jain Pav bhaji is ready.Serve hot with lemon wedges and coriander.
